As thickener and stabilizer of acid dairy,our CMC prevents the protein from coagulation of precipitation and delamination ,giving the dairy products an unique and exquisite taste .
As water retention agent in pastry and jam, it prevents food dehydration and cracks, gives certain thixotropy and improves shelf life stability and luster of the pastry.
